Knots, splits and a board that moves
Oak is a tree before it is a board. It carries knots where branches were, it darkens where the sun reached it, and a wide board will cup a little in a dry kitchen and flatten again in a wet one. None of that is a fault and none of it is sanded out here.
What is done instead: the plank is air-dried for two years, the staves are turned end-up so the block takes a knife without scarring, and the glue lines are set where the grain wants them. Two boards from the same plank will still not match, and the photograph on each one is of the board you will get.
